Mmmmmm, My Italian Beef!
1 GOOD Eye of Round Roast (Get good cuts, it makes ALL the difference!)
1 Package Good Seasons Italian Dressing Mix
1 package Au jou Gravy Mix (McCormick or Similar)
Italian Seasoning to Taste (I never measure, I sprinkle freely until it looks good to me...)
7-10 small sweet banana/wax peppers or pepperochini's to taste. (Pick your favorite peppers, I like Mild pepperochini's for flavor without too much bite and I use BOTH kinds of peppers above and I deli-slice my Pepperochini's but leave the Wax peppers whole.)
Combine all ingredients in a slow cooker/crock pot, (Pre-mix the seasoning in a little water to dissolve...) Poor over roast, then fill with water until the roast is JUST covered. (2-3 cups normally). Cook on low 8-12 hours. Sometime around 4-6 hours, break up meat with a fork to shred into fine pieces.
