Peanut Butter Candy Roll

Now how about a post that brings smiles instead of ranting?

This is a traditional Southern treat, I just made some and it's one of my Daddy's favorites and really super easy to make.

Peanut Butter Candy Roll

1 stick real butter softened to room temperature
1 small box confectioner's (powdered) sugar
1 tsp vanilla
1 jar peanut butter (You will not use much)

combine butter, vanilla and sugar in a bowl... slowly add the sugar and fold it in until you make a nice soft but easily rolled dough.
on wax paper, dust with sugar then roll out your dough about 1/4 tp 1/8 inch thick (You want it as thin as you can roll it but still manage to roll it later).

Once it's all rolled out, spread a nice layer of peanut butter on your dough and then using the edge of the wax paper lift and roll dough into a tube.

Freeze for an hour or two to firm it up, bring it out and cut into peanut butter pinwheels. All in all prep takes about 10 minutes. Super easy to make,.

Eat and enjoy, keep refrigerated.

You will use ALMOST the whole small box.... it's going to vary. I fold in the sugar with my hands so I can test the firmness of the dough, when your hands come away without butter sticking to them, your dough is good. :)

Ooh, that sounds yummy! How many pinwheels does this recipe usually yield? (I'm seeing 6 or 7 friends on Sunday and I think I'd like to try making these for everyone!) ^_^

it makes probably about 12-16 pinwheels depending on how thick you cut them :)

I should note... you'll have leftover crumby ends. :) Those always fall apart when cutting and you can nibble the debris. I get about 20 pinwheels out of it but I try and cut them thin.
